Elizabeth Davis

Elizabeth Joan Davis was born on October 2, 1944, at Manson, IA, the daughter of Walter J. and Beulah J. (Hall) Eigsti. She was raised on the family farm, attending area grade school and graduated from high school in 1961. Elizabeth was baptized and confirmed at St. Pauls American Lutheran Church in Manson, IA where she was united in marriage to Malcolm Davis on November 24, 1962. To this marriage 5 sons were born. After the boys were in school, Elizabeth enrolled in the New Ulm LPN School. She loved working in the nursing home setting and worked at various homes in the Sanborn area and later in the Twin Cities. The couple had a farm near Sanborn and later moved to the Hastings to be near to Malcolm's work as an appraiser for the Dakota County Assessor's Office. The couple was very active in the Order of the Eastern Star and in 1981 she was appointed as a state officer to that organization. She greatly treasured the lasting ties and friendships that were formed over the years. She was active for many years at the United Methodist Church in Sanborn and later in Hastings where she worked with the children's Sunday School and music programs. Music was always an important part of her life and she enjoyed playing the pipe organ in her childhood church and later playing the church organ in various churches for weddings and events. Elizabeth died on Monday, July 14, 2014, at St. Mary's Hospital in Rochester, MN at the age of 69 years. She is survived by her husband - Malcolm Davis of Springfield, MN; sons - Tan (special friend - Beverly Peterson) of Pollack, SD, Tal (Tami) of Sanborn, MN, Phillip (Dawn) of Spring Valley, WI, Jared of Sanborn, MN, and Matthew (fianc - Jennifer Schroeder) of Springfield; 9 grandchildren; 2 great grandchildren and many other relatives and friends.
