Carol Knaak

Carol Knaak, age 71, of St. James died on Wednesday, August 15, 2018 at Pleasant View Good Samaritan Society in St. James. Carol Diane Krueger was born February 2, 1947 in Mankato, MN, the daughter of Elmer and Geraldine (Kuehl) Krueger. She was baptized and confirmed in the Lutheran Faith. On June 21, 1963 she married Dean Neuenfeldt, they later divorced. On August 16, 1991 Carol married David D. Knaak. Over the years, she had worked at Armour Swift-Eckrich for 25 years, St. James Public school in the kitchen, Truman Lutheran Retirement Home, Hillcrest Nursing Home, Pauls Food Pride and Tony Downs Foods in Madelia for 17 years. Carol enjoyed camping, campfires, fishing, crocheting, puzzles and most of all just spending time with her grandkids, great-grandkids and family. She loved to go to coffee with her lady friends. She had a passion for volunteer work for ALS and Rely for Life. Carol is survived by her husband David Knaak, 4 daughters; Brenda Benson, Kay Oliver, Fay Fonseca, Denise Solis, step-daughter Lisa (Tom) Boys, step-sons; Mark Knaak, Bruce (Melissa) Knaak, 6 grandchildren; Theron, Aaron, Brandon, Kyle, Dallas, Kyrsten, 16 great-grandchildren, 5 step-grandchildren, siblings; James (Carol) Krueger, Lois Morrow Engel, Diane C. (Robert) Sorenson, Larry (Bonita) Krueger, Barb (Rick) Ristau, Liane (Norman) Porter and Warren (Kathleen) Krueger. She is preceded in death by her parents, grandparents, grandson Corey J. Zacharias, great-granddaughter Isabella Rose Neuenfeldt, mother-in-law Charlotte Lindquist, brothers-in-law Jeff Knaak, Tom Morrow, Ron Engel, sister-in-law Betty Knaak Mausling, a niece, nephew, a nephew and Godson Bruce Peanut Krueger, special friend Shirley Blackstad, and her precious dog Shadow.
