Carol E. Eckstein

Carol Erma Eckstein was born on March 10, 1940 in New Ulm, MN to Louis Daniel and Anna Elizabeth (Harms) Cordes. After graduating from New Ulm High School she worked at Kraft for 2 years. Carol married Charles Eckstein on February 18, 1960 at St. Mary's Catholic Church in Sleepy Eye. The couple made their home in Sleepy Eye. Carol loved working for Head Start because of her love of children. She enjoyed flower gardening, embroidery, cross word puzzles, reading, playing cards and babysitting her grandkids. She is survived by her sons, Bradley (Linda) Eckstein of Sleepy Eye, Mark Eckstein of New Ulm, Scott Eckstein of Morgan and David Eckstein of Sleepy Eye, four grandchildren, two great grandchildren and sister, Connie (Bill) Smith of New Ulm. She was preceded in death by her parents, husband, Charles, daughter-in-law, Carmen Eckstein and sister, Cynthia (Daniel) Macklenburg.
