Carol Jacoby

Carol Mae Jacoby was born on March 14, 1937 in St. James, Minnesota to Ingeborg and Peter Forseth of the Godahl area. She was baptized and confirmed at Albion Lutheran Church. Carol was a graduate of St. James High School and Mankato State Teachers College. After graduation, she taught fourth grade at Winthrop, Minnesota. She married Don Jacoby, of St. James, on April 2, 1958 at Albion Lutheran Church. This year they celebrated their sixtieth wedding anniversary. Carol and Don were blessed with three children, Julie, Lisa and Paul. They lived on the family farm north of St. James until they moved to town in 1997 when Don retired from farming. Carol and Don have been members of First Lutheran Church in St. James for sixty years. During that time, Carol has served as a Sunday School teacher, Luther League advisor, was active in the women's organizations and helped to make the hardanger paraments which are still used today. During the early years of the church bazaar, women from the church gathered in her kitchen at the farm to make lefse. Carol enjoyed making pine-needle baskets and has created many lovely pieces of cross-stitch embroidery and hardanger. In 1986 she was awarded first place in the 8th annual Hardanger Embroidery Design Contest for her christening gown, as well as honorable mention in 1990 for her doily. Her patterns were included in books of Award-Winning Designs in Hardanger Embroidery published by the Nordic Needle of Fargo, North Dakota. Carol also enjoyed stamping and embossing cards and writing poetry. She was known for beautiful handwriting and her collection of sheep. Carol lived the last three years of her life at Trimont Health Center and Pleasant View Good Samaritan Home in St. James, where she died on Thursday, July 26, 2018. She was preceded in death by her parents, Peter and Ingeborg Forseth; grandson, Caleb Nash; brothers-in-law, LeRoy Olson and Jim Jacoby and sister-in-law, Janet (Therm) Wetteland. Carol is survived by her husband, Don Jacoby; daughters Julie (Jeff) Nash of Ankeny, Iowa and Lisa (Jay) Davis of Eau Claire, Wisconsin; son Paul (Melissa) Jacoby of St. James; grandchildren, Brooke Jacoby, Seth (Jocelyn) Jacoby, Miranda Jacoby, Tyler and Matt Davis, Hailey, Austin, Jonathan, and Jaelynn Nash; great grandchildren, Alissa Davis and Sydney Davis; brother, Amos Forseth; sister, Betty (Tom) Sanger; sister-in-law, Leona Jacoby and brother-in-law John (Charlotte) Jacoby.
